Scones or biscuits? Whatever you call them, these delicious delights are super quick to make and oh so tasty!

What is the difference between a scone and an American biscuit? Well according to the one and only Martha Stewart “The basic ingredients are essentially the same…the difference was really just cultural and creative variation.” So call it what you want.

To make these scones (I’m just going to go with that) you need some of the currently very fashionable coconut oil. It sounds bizarre but trust me, it really works.

I LOVE an easy recipe so here goes…

3 ingredient coconut oil scones

All you need is…

3 ingredient coconut oil scones

  • 2 cups (280g) self-raising flour
  • 1/4 cup coconut oil (solid, not melted)
  • 3/4 cup coconut milk (carton)

Method:

  • Preheat oven to 200 degrees C.
  • Add self-raising flour and coconut oil to a mixing bowl, and use a fork to cut the coconut oil into the flour until the mixture is like fine crumbs – similar to when making crumble.
  • Stir in the milk until mixture forms a soft dough and no longer sticks to the sides of the bowl.
  • Knead the mixture until combined.
  • Lightly dust your work top with flour and roll the dough out until it reaches a 1/2-inch thickness.
  • Use a scone cutter and transfer to a baking sheet.
  • Bake for 10 minutes, or until the scones have risen and slightly begin to brown on top.
  • Remove and enjoy!
